Taco Empanadas with Michael's Home Cooking
These empanadas are awesome. The mixture of beef, beans, spices and cheese is great and is like a new kind of taco or Taco Empanadas. Ingredients: Filling: a little olive oil to get things started 1 ear of corn 1/4 cup green bell pepper 1 clove garlic 1 serrano chili with seeds and all 1/4 cup onion 1/2 teaspoon salt 2 teaspoons capers (optional) 2 teaspoons regular chili powder 1/4 teaspoon cumin 1 teaspoon dried oregano (did not show) 1 teaspoon dried cilantro (did not show) 1 pound ground beef 10 ounce jar of mild taco sauce Dough: 4 ounces butter 4 ounces Philadelphia cream cheese 1/4 teaspoon salt 1 and 1/2 cups all purpose flour Additional ingredients: 16 ounce can of refried beans mixed with 1/4 cup sour cream cheddar cheese iceberg lettuce tomato slices sour cream hot sauce radishes egg I make the dough first, and it was not enough. So I had some store bought pie crust on hand to help out. You will need to double the dough recipe. I still had some meat mixture left, if I had used the other store bought pie dough "round" I would been able to use up the meat mixture. Sorry, but I actually did make this up, as I recorded this. I saw the idea on Facebook but never looked at the recipe only the picture. Make your dough and roll out to 1/4 inch thickness. Cut it into 5 and 1/2 inch rounds or the size that you like. Place some of the refried beans mixed with the sour cream into the round of dough. Add 1/4 cup of the filling to the dough with some cheddar cheese. Brush some water on the edges of the dough and fold into half moons and crimp edges with a fork. Use an egg wash of 1 egg mixed with 1 and 1/2 teaspoons water to paint onto the empanadas. Bake for 45 minutes @ 400F in your oven. You could also deep fry in 375F vegetable oil, but I have not tried that. I am sure this would be excellent deep fried, but do not use the egg wash if frying. Serve on a bed of shredded lettuce for a nice crunch, like a taco would have lettuce! Thank you for watching!
